I Was Stone Cold Against Making It
My husband is a southern guy and sometimes when he throws things at me to make, I have to wonder if he is serious. When he mentioned Butter Milk Pie I almost threw a gasket and I said “no way, no how will I make it”. Thinking about it made me crazy that he would ask the best cook in the world to create such a mess.
I kept silent but my mind was going crazy and I started looking at recipes on the internet for this jacked up pie. I mean seriously I hate buttermilk so how good could a pie be and I thought it was just some crap that people made up to feed their children during hard times.
Well I was in for a shock of a life time because there were many recipes out there and with the exception of a few they all seemed good. Yes a sugar buttermilk nightmare is what I was thinking.
Well after some thought about the different recipes I constructed one heck of a pie with my own twist. Hold on to your forks because this is probably the best pie I have eaten that was new to me in a very long time.
Now when he asks me to make it, I am like heck yes let’s get to it.
Ingredients
- 3 Eggs;
- 1/2 cup of butter, softened;
- 1/2 cups of white sugar;
- 3 tbs of all purpose flour;
- 1 cup of buttermilk;
- 1 tsp vanilla extract;
- 1/2 teaspoon of almond extract;
- 1 tbs of lemon juice if you want it more tart add more;
- 1/8 tsp of nutmeg freshly grated;
- 9 inch pie crust.
Whipped cream and fresh berries to decorate.
Directions
Preheat oven to 350 degrees (175 degrees C)
Beat eggs until frothy, add butter, sugar and flour beat until smooth
Stir in buttermilk, vanilla, lemon juice, nutmeg and cinnamon.
Pour into an unbaked pie shell.
Bake on 350 for 40 to 60 minutes or until center is firm and let the top of the pie get a nice golden color
A Tasty New Pie for You to Use Year After Year
If you like key lime pie you will love this pie. It is sweet yet tart and it is the consistency of key lime pie. I suppose you could use lime juice and it would be just as good. It is one dessert your guest will keep asking you to make year after year.
Do Not Tell Your Guest What Kind of Pie It Is
In order for you to get your guest to try this, do not tell them what kind of pie it is. They would probably stick their noses up to it just like I did when my husband wanted me to make it. No one I worked with but one person even knew what it was. The rest wouldn’t eat it and they missed out.
People who do not like to try new stuff, you might have to tell them its key lime pie or something of the sort because that is the only way to get them to eat it. Well maybe not.

How to Make Meringue
The older the eggs the better the meringue you will make. Three to four days old work much better then eggs that are fresh. You also don’t want to make it on rainy days either. It is mostly made of air and if the humidity is high it will have an affect on the meringue.
Directions
2 egg whites
1/4 tsp cream of tartar
4 tablespoons sugar
1⁄2 teaspoon vanilla extract
- Beat the egg whites until frothy.
- Gradually add in the sugar and cream of tartar continuing to beat until stiff.
- Combine vanilla extract.
- Spread over pie and bake at least 10-15 minutes at 350.
This makes possibilities endless. You can use thinly sliced lemons to garnish.
What a Great Pie With So Many Options
You can make this a simple pie for your family or you can go all out to create your own. I prefer just the simple version but would not hesitate to pull out all the stops with this pie. There are so many options to decorate this pie with and to make it even more outstanding then what I created.
If you ever make this pie for yourself, you will always want it. I was stone cold against making this pie. It reminded me of my husband wanting hog head soup with a real pig head lol. I thought it was about on that level but no way it is delicious. Low calorie? No but a small piece will do.
